But a very special one planned. Peter will be home for a day after four weeks away! Too bad it's not longer, but we'll take what we can get.
I totally skipped my "official" weigh-in report this week, but I am over the moon excited to report that I finally broke through an invisible weight wall I've been running up against for over 10 years this morning. I finally saw 127.4 lbs on the scale.
Left to go: 7.4 lbs!! That seems so much less than 21 lbs when I started. I can definitely feel a difference in my clothes now. The seams on my lululemon pants are thanking me, I'm sure.
I must say I'm not enjoying month 2 of Insanity as much as month 1. I think it's because of the length of the workouts - an hour is too long for me most days. I'm going to finish (3 weeks left) but I doubt I'll do many max DVDs again. I will probably do some from the first month - they're pretty fun.
And, one more thing to be excited about - I hit the halfway point of my internship today. In one way it's a bit depressing, because it already feels like it's been forever, but in another way it's exciting because now we're counting down. What I'm really counting down to right now is the end of teaching two classes and Peter coming home. After I'm down to prepping one class and my husband is back home I imagine things will be slightly less crazy.
Since I've been slacking on posting lately, here are a few pictures of some meals I've had in the past couple of weeks.
This was a huge weekend lunch! It was absolutely delicious, but so much food. You'll see I couldn't get enough chicken on the pizza so I had to add some to my salad. On the weekends I eat my grain at lunch, which during the week I have it at breakfast (just a matter of convenience).
Homemade chicken fingers, 1/2 cup sweet potato fries (recipe here and they are delicious!), and 1 1/2 cups bean sprout stir-fry. I've decided I like my bean sprouts raw ... This is a supper.
This was a pretty boring supper. Roasted salmon with a dill sauce, and sauteed sugar snap peas and baby carrots. I like to split up my 2 cups of veggies if they're cooked. It's a lot of one type of vegetable to eat.
And that's some of what I've been eating. It's interesting - I had my consult yesterday and Cory asked me if I was still weighing my meat. I said I was and then he mentioned that was good because most people start eating less protein once they stop weighing it! I figured it was to keep me from increasing my portion size ;)
Well, since Peter's home tomorrow I'd like to prep as much as possible for next week tonight. I guess I should get at it!
